Ingredients
- 1 pkg (120 g) Stove Top Stuffing Mix for Turkey
- 2 Tbsp. melted butter or margarine
- 1/2 cup each: hot water and whole berry cranberry sauce
- 2 tsp. grated orange rind
- 4 turkey scallopini
- 1 Tbsp. oil
- 1/4 cup whole berry cranberry sauce
- 1/3 cup orange juice
- 1 tsp. corn starch
Method
- MIX stuffing mix with butter, hot water, whole berry cranberry sauce and orange rind; let stand 5 minutes to soften.
- DIVIDE stuffing among turkey scallopini, spreading over surface.
- Roll up and secure with toothpicks.
- HEAT oil in frypan over medium-high heat; brown rolls on all sides.
- Reduce heat, cover and cook 10 to 12 minutes or until turkey is cooked.
- Remove rolls and toothpicks.
- MIX cranberry sauce, orange juice and cornstarch until smooth; bring to a boil, stirring constantly until thickened.
- SLICE rolls; drizzle sauce on top.
