Ingredients

  • 1 3 ounce box cranberry jello mix
  • 1 cup boiling water
  • 1 cup cold fresh unsweetened cranberrie juice, my recipe attached in direction step #2
  • 1 1/4 cup cold heavy whipping cream
  • 2 tbsp confectioner's sugar
  • 1/2 tsp vanilla extract
  • 3 tbsp shaved dark chocolate

Method

  • Dissolve jello in boiling water
  • Combine this with the cold cranberrie juice, recipe for the juice attached below and mix well.
  • Refigerate just until cold but NOT setting up, about 20 minutes but keep an eye on it, it just needs to be cold
  • Meanwhile whip cream to soft peaks, beat in sugar and vanilla, then beat in cold cranberry mixture
  • Spoon into decorative glassed and refigerate at least 2 hours to set
  • Garnish with whipped cream, candied cranberries, recipe attached below and grated chocolate
