Ingredients
- 3/4 c. sugar
- 3 egg yolks
- 1 1/3 c. water
- 1 tsp. vanilla
- 1 can flake coconut
- 3 Tbsp. flour
- 1 large can evaporated milk
Method
- Mix flour and sugar together in top of double boiler.
- Add slightly beaten egg yolks, milk and water.
- Cook over simmering water until thick.
- Add vanilla and coconut.
- Save 1/4 coconut for meringue.
- Pour into 9-inch baked pie shell; top with meringue and sprinkle with coconut.
- Bake until light brown in 350° oven.
