Ingredients

  • 3/4 c. sugar
  • 3 egg yolks
  • 1 1/3 c. water
  • 1 tsp. vanilla
  • 1 can flake coconut
  • 3 Tbsp. flour
  • 1 large can evaporated milk

Method

  • Mix flour and sugar together in top of double boiler.
  • Add slightly beaten egg yolks, milk and water.
  • Cook over simmering water until thick.
  • Add vanilla and coconut.
  • Save 1/4 coconut for meringue.
  • Pour into 9-inch baked pie shell; top with meringue and sprinkle with coconut.
  • Bake until light brown in 350° oven.
