Ingredients

  • 2 1/4 c. flour
  • 1/2 c. granulated sugar
  • 1 c. butter
  • 1 egg yolk
  • 3 Tbsp. brown sugar
  • 1 tsp. cinnamon

Method

  • Mix flour and granulated sugar.
  • Cut in butter with a fork. Add egg yolk.
  • Mix.
  • Form into 2 rolls.
  • Beat egg white slightly. Brush it on the roll and then roll the roll in a mixture of brown sugar and cinnamon.
  • Chill 1 hour.
  • Cut into slices about 1/8-inch in thickness.
  • Bake at 350° for 12 to 15 minutes or until very lightly browned (golden in color).
  • Makes 40 to 60 cookies.
  • Bake on rack higher than the middle of the oven.
