Ingredients

  • 1 lb. ground beef, chicken or turkey
  • 1/2 c. chopped onion
  • 1 tsp. salt (divided usage)
  • 1/4 tsp. pepper
  • 10 Old El Paso whole green chilies, seeded, rinsed and halved crosswise
  • 4 eggs, beaten
  • 1 1/2 c. milk
  • 1/4 c. flour
  • 1 1/2 c. (6 oz.) sharp Cheddar cheese, shredded
  • taco sauce

Method

  • Brown meat and onion.
  • Drain fat.
  • Add 1/2 teaspoon salt and pepper.
  • Place 1/2 of chilies on bottom of a 12 x 8-inch baking dish.
  • Top with meat mixture.
  • Arrange remaining chilies on top. Combine eggs, milk, flour, and 1/2 teaspoon of salt until smooth. Pour over chilies.
  • Top with shredded cheese.
  • Bake at 350° for 45 minutes or until browned and knife inserted off center comes out clean.
  • Serve with taco sauce.
