Ingredients
- 1 lb. ground beef, chicken or turkey
- 1/2 c. chopped onion
- 1 tsp. salt (divided usage)
- 1/4 tsp. pepper
- 10 Old El Paso whole green chilies, seeded, rinsed and halved crosswise
- 4 eggs, beaten
- 1 1/2 c. milk
- 1/4 c. flour
- 1 1/2 c. (6 oz.) sharp Cheddar cheese, shredded
- taco sauce
Method
- Brown meat and onion.
- Drain fat.
- Add 1/2 teaspoon salt and pepper.
- Place 1/2 of chilies on bottom of a 12 x 8-inch baking dish.
- Top with meat mixture.
- Arrange remaining chilies on top. Combine eggs, milk, flour, and 1/2 teaspoon of salt until smooth. Pour over chilies.
- Top with shredded cheese.
- Bake at 350° for 45 minutes or until browned and knife inserted off center comes out clean.
- Serve with taco sauce.
