Ingredients
- 1 can (27 oz.) can Ortega green chiles
- 1 lb. Cheddar cheese, grated
- 1 lb. Jack cheese, grated
- 5 eggs
- 1 large can evaporated milk
- salsa
Method
- Grease large (10 x 14-inch) roaster pan.
- This is better than a 9 x 13-inch Pyrex.
- Clean the chiles and remove all seeds, dry on paper towels.
- Lay them side by side to cover the bottom of the roaster.
- Distribute the whole pound of Cheddar cheese over the top of the chiles.
- Beat eggs and milk together and pour over the Cheddar and chiles.
- Top all with the pound of Jack cheese and bake in a 350° oven 40 to 45 minutes, or until golden brown. Serve plain or with salsa.
