Ingredients

  • 1 can (27 oz.) can Ortega green chiles
  • 1 lb. Cheddar cheese, grated
  • 1 lb. Jack cheese, grated
  • 5 eggs
  • 1 large can evaporated milk
  • salsa

Method

  • Grease large (10 x 14-inch) roaster pan.
  • This is better than a 9 x 13-inch Pyrex.
  • Clean the chiles and remove all seeds, dry on paper towels.
  • Lay them side by side to cover the bottom of the roaster.
  • Distribute the whole pound of Cheddar cheese over the top of the chiles.
  • Beat eggs and milk together and pour over the Cheddar and chiles.
  • Top all with the pound of Jack cheese and bake in a 350° oven 40 to 45 minutes, or until golden brown. Serve plain or with salsa.
