Ingredients

  • 3 chicken breast halves, skinned
  • 2 Tbsp. oil
  • 1 c. broccoli flowerets
  • 1 c. cauliflowerets
  • 3/4 c. sliced carrots
  • 1/4 c. green onion, sliced
  • 1 garlic clove, minced
  • 1/2 c. Miracle Whip
  • 1 Tbsp. soy sauce
  • 1 tsp. ground ginger

Method

  • In large skillet heat 1 tablespoon oil over medium heat. Stir-fry vegetables 4 to 5 minutes; remove vegetables from pan. Add remaining oil to skillet.
  • Stir-fry chicken 4 minutes or until tender.
  • Return vegetables to pan with chicken; mix well.
  • Serve over rice.
