Ingredients
- 2 lb. chicken drumsticks
- 5 cloves garlic, pressed
- 1 Tbsp. olive oil
- 1 can tomato paste
- 3 Tbsp. Goya sofrito (Spanish section of supermarket)
- 1 bunch cilantro, chopped (in produce section)
- 2 c. water
- 1 lb. cooked spaghetti
Method
- In heavy 4-quart pot, saute garlic in oil for 3 minutes.
- Add drumsticks.
- Simmer until brown, turning frequently.
- After 10 minutes, add tomato paste, sofrito, cilantro and water.
- Bring to a boil; cover tightly and cook on low for 40 minutes.
- Add cooked spaghetti, mix and serve.
