Ingredients

  • 1 1/2 c. sugar
  • 1/3 c. water
  • 1/4 tsp. cream of tartar
  • pinch of salt
  • 3 egg whites
  • 1 tsp. vanilla

Method

  • Combine sugar, water, cream of tartar and salt in a saucepan. Cook, covered, for 3 minutes.
  • Remove cover and cook to soft ball stage (242°) on candy thermometer.
  • While syrup is cooking, beat egg whites until stiff (not dry).
  • Slowly add hot syrup to egg whites, beating at high speed all the time.
  • Beat until it holds straight peaks.
  • May add coconut for coconut cake.
