Ingredients
- 1 1/2 c. sugar
- 1/3 c. water
- 1/4 tsp. cream of tartar
- pinch of salt
- 3 egg whites
- 1 tsp. vanilla
Method
- Combine sugar, water, cream of tartar and salt in a saucepan. Cook, covered, for 3 minutes.
- Remove cover and cook to soft ball stage (242°) on candy thermometer.
- While syrup is cooking, beat egg whites until stiff (not dry).
- Slowly add hot syrup to egg whites, beating at high speed all the time.
- Beat until it holds straight peaks.
- May add coconut for coconut cake.
