- 3 to 5 cloves chopped garlic
- 2 Tbsp. olive oil
- 1 chopped onion
- sliced zucchini to taste
- sliced green pepper to taste
- sliced carrots to taste
- chopped celery to taste
- cauliflower, broken into flowerets
- hot red pepper to taste
- 3 ripe tomatoes
- cooked pasta
- Parmesan cheese
Method
- Saute garlic in olive oil until golden and remove.
- Add vegetables to oil and saute.
- Add tomatoes; smoosh and stir.
- Add cooked pasta and saute until pasta picks up color/flavor.
- Toss all with fresh grated Parmesan cheese.
