Ingredients

  • 2 lb. boneless, skinless chicken pieces
  • 2 lb. sauerkraut
  • 6 oz. Swiss cheese (4 to 6 slices)
  • 1 (8 oz.) bottle Thousand Island salad dressing

Method

  • Rinse and drain sauerkraut; squeeze out excess liquid.
  • Line a 1 1/2 to 2-quart baking dish with aluminum foil; spray or wipe foil with cooking oil.
  • Arrange chicken in dish.
  • Spread sauerkraut over and around chicken.
  • Top with cheese slices.
  • Pour dressing over all.
  • Cover and seal dish with foil.
  • Bake at 325° for about 1 hour.
  • (Cooking time may vary with size and thickness of chicken pieces.) Remove foil carefully, first lifting from far side of dish to release steam.
  • Serves 4 to 6.
