Ingredients
- 2 1/2 to 3 lb. chicken
- 1 tsp. salt
- 1 onion, minced
- 1 c. chicken broth
- 3 potatoes, diced
- 1 carrot, diced
- 1 can cream of celery or cream of mushroom soup
- 1 stick butter
- 1 c. self-rising flour
- 1 c. milk
Method
- Cover chicken with water.
- Add salt and onion to water; boil gently until tender.
- Remove from bone and cut into bite size pieces.
- Place chicken in casserole.
- Combine chicken broth, potatoes and carrot and pour over chicken.
- Spread can of soup over this.
- In a bowl, mix together 1 stick butter, flour and milk.
- Pour mixture over chicken.
- Bake at 350° to 375° for 30 to 40 minutes or until brown.
