Ingredients

  • 2 1/2 to 3 lb. chicken
  • 1 tsp. salt
  • 1 onion, minced
  • 1 c. chicken broth
  • 3 potatoes, diced
  • 1 carrot, diced
  • 1 can cream of celery or cream of mushroom soup
  • 1 stick butter
  • 1 c. self-rising flour
  • 1 c. milk

Method

  • Cover chicken with water.
  • Add salt and onion to water; boil gently until tender.
  • Remove from bone and cut into bite size pieces.
  • Place chicken in casserole.
  • Combine chicken broth, potatoes and carrot and pour over chicken.
  • Spread can of soup over this.
  • In a bowl, mix together 1 stick butter, flour and milk.
  • Pour mixture over chicken.
  • Bake at 350° to 375° for 30 to 40 minutes or until brown.
