Ingredients
- 1 stick margarine
- 1/2 c. Crisco
- 2 c. sugar
- 5 egg yolks
- 2 c. flour
- 1 tsp. baking soda
- 1 c. buttermilk
- 1 tsp. vanilla
- 1 small can coconut
- 1 c. chopped nuts
- 5 egg whites, stiffly beaten
Method
- Cream margarine and shortening.
- Add sugar and beat until smooth.
- Add egg yolks; beat well.
- Combine flour and soda and add to creamed mixture alternately with buttermilk.
- Stir in vanilla. Add coconut and chopped nuts.
- (I use walnuts or pecans.)
- Fold in egg whites.
- Bake in 3 (8-inch) pans greased and floured.
- Cover with cream cheese frosting.
