Ingredients

  • 1 long (1 lb.) loaf French bread or 4 Italian rolls
  • butter or margarine, softened
  • 1/2 c. grated Parmesan cheese
  • 1 tsp. salt
  • 1 1/2 Tbsp. minced onion
  • 1/4 c. sliced olives (optional)
  • 2 ripe tomatoes, thinly sliced
  • 3/4 lb. ground beef
  • 1/2 tsp. dried oregano leaves
  • 1 1/2 tsp. pepper
  • 1 1/2 (6oz.) cans tomato paste
  • 8 slices cheese

Method

  • Cut bread loaf or rolls in halves, lengthwise.
  • Spread with butter. Brown beef and drain. Combine with Parmesan cheese, seasonings, onions, tomato paste and olives.
  • Spread mixture on cut side of bread loaf or roll. Place loaves or rolls on cookie sheet. Top with tomato slices.
  • Bake in moderate oven at 350° for 20 minutes.
  • Remove from oven, top with cheese slices and return to oven until cheese is melted, about 5 minutes.
  • Makes 8 to 10 servings.
