- 1 long (1 lb.) loaf French bread or 4 Italian rolls
- butter or margarine, softened
- 1/2 c. grated Parmesan cheese
- 1 tsp. salt
- 1 1/2 Tbsp. minced onion
- 1/4 c. sliced olives (optional)
- 2 ripe tomatoes, thinly sliced
- 3/4 lb. ground beef
- 1/2 tsp. dried oregano leaves
- 1 1/2 tsp. pepper
- 1 1/2 (6oz.) cans tomato paste
- 8 slices cheese
Method
- Cut bread loaf or rolls in halves, lengthwise.
- Spread with butter. Brown beef and drain. Combine with Parmesan cheese, seasonings, onions, tomato paste and olives.
- Spread mixture on cut side of bread loaf or roll. Place loaves or rolls on cookie sheet. Top with tomato slices.
- Bake in moderate oven at 350° for 20 minutes.
- Remove from oven, top with cheese slices and return to oven until cheese is melted, about 5 minutes.
- Makes 8 to 10 servings.
