Ingredients

  • 1 chicken, cooked, deboned and chopped
  • 1 box long grain and wild rice, cooked according to directions
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 small carton sour cream
  • 1 c. mayonnaise (not salad dressing)
  • 1 can sliced water chestnuts, drained
  • 1 can French-style green beans, drained
  • 1 jar mushrooms, drained
  • salt and pepper
  • 2 chopped green onions (tops and all)
  • 2 c. grated Cheddar cheese

Method

  • Mix soups, sour cream, mayonnaise, salt and pepper. Add rice, green beans, water chestnuts, mushrooms and cheese. Add chicken last; mix well. Bake at 350°, uncovered, 45 minutes in a 9 x 13-inch baking dish. Stir occasionally. Let stand about 15 minutes before serving.
