Ingredients

  • 1 lb. cooked chicken, minced
  • 2 c. bread crumbs
  • 1 tsp. butter
  • 2 tsp. flour
  • 2/3 c. milk
  • 2 eggs, beaten
  • 1/2 c. chilies, chopped
  • 1 green onion, chopped
  • 1 tsp. garlic powder

Method

  • Mix chicken and half of bread crumbs; set aside.
  • Melt butter on low.
  • Stir in 1/2 flour; cook slow.
  • Stir in milk, stirring slowly until you have a thick white sauce, about 1 1/2 minutes. Mix chicken and 1/2 of bread crumbs to white sauce.
  • Add chilies, green onion and garlic powder.
  • Make balls.
  • Roll in egg, then in bread crumbs.
  • Fry in deep fryer at 350° until brown.
