Ingredients

  • 1/2 c. soft margarine
  • 1/2 c. vegetable oil
  • 1 3/4 c. sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 c. nuts, chopped fine (optional)
  • 2 c. shredded zucchini
  • 1/2 c. sour milk
  • 2 1/2 c. flour
  • 4 Tbsp. cocoa
  • 1/2 tsp. baking powder
  • 1 tsp. soda
  • 1/4 c. or more chocolate chips

Method

  • Cream the margarine, oil and sugar.
  • Add the eggs, vanilla and sour milk.
  • Beat well with mixer.
  • Mix together all the dry ingredients and add to the creamed mixture.
  • Stir in zucchini. Pour batter into 2 greased and floured loaf pans.
  • Top with chocolate chips and nuts.
  • Bake for 45 minutes at 325° (until toothpick comes out clean).
