Ingredients
- 1 c. frozen, cubed vegetarian protein chicken
- 2 c. brown rice, cooked
- 1 c. celery, chopped
- 1/2 c. onions, chopped
- 1/4 c. red bell peppers
- 1 1/2 c. mayonnaise
- 1 Tbsp. lemon juice
- cheese or potato chips (optional)
Method
- Stir all ingredients together.
- Place in baking dish.
- Top with cheese or crushed potato chips.
- Bake 30 minutes at 350°. Serves 6.
