Ingredients

  • 2 tbsp olive oil
  • 4 None boneless skinless chicken breasts
  • 7 oz button mushrooms, thinly sliced
  • 1 clove garlic, crushed
  • 1 cup dry white wine
  • 2 tbsp lemon juice
  • 1/2 cup heavy cream
  • None None Steamed vegetables, to serve

Method

  • Heat 1 tbsp of the oil in a large skillet on medium heat. Add the chicken and cook for 4-5 mins each side, until browned and cooked through. Remove from skillet and keep warm.
  • Heat remaining 1 tbsp oil in same pan on medium heat. Add the mushrooms and garlic and saute for 2-3 mins, until mushrooms are just tender. Add wine and lemon juice. Bring to a boil.
  • Reduce heat to low; simmer for 4-5 mins until reduced by half. Stir in cream. Season to taste. Simmer for 2-3 mins until thickened slightly. Serve chicken sliced with mushroom sauce and steamed vegetables.
