Ingredients

  • 2 c. white sugar
  • 4 eggs
  • 1 c. salad oil
  • 2 c. sifted flour
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 3 c. grated carrots
  • 1/2 c. ground nuts (walnuts)

Method

  • Mix oil and sugar.
  • Add one egg at a time.
  • Sift dry ingredients together.
  • Mix together, then add carrots and nuts. Blend with mixer.
  • Pour in pan and bake (flour pans) at 350° for 30 to 35 minutes.
  • Don't look until 30 minutes are up.
  • Cool and frost; add nuts on top.
