Ingredients
- 2 pkg. dry yeast
- 4 c. flour
- 1/3 c. oil
- 1 1/2 tsp. salt
- 1 1/2 c. very warm water
- 1/4 c. sugar
- 1 egg
Method
- Dissolve yeast in warm water and let stand 5 to 10 minutes before stirring.
- Add 2 cups of the flour and all other ingredients.
- With electric mixer, blend at low speed, then beat 2 minutes.
- Beat in remaining 2 cups flour by hand.
- Cover and let rise until doubles (30 to 40 minutes).
- Stir batter down to deflate.
- Spoon into greased muffin tins and let rise again.
- Bake at 425° for 10 minutes.
- Serve hot.
- Makes about 2 dozen.
