Ingredients

  • 1 10 lb boneless short rib
  • 1 tbsp of ground cumin
  • 1 tbsp of paprika
  • 1 tbsp of black pepper
  • 1 tbsp of kosher salt
  • 2 tbsp of dark brown sugar
  • 1 tbsp of ancho chili powder
  • 1 tsp of cinnamon
  • 4 tbsp of olive oil or canola oil
  • 1 spanish onion diced
  • 2 carrots chopped
  • 2 ribs of celery chopped
  • 4 cloves of garlic chopped
  • 1 can of tomato paste
  • 1 cup of red wine
  • 3-4 cups of beef stock
  • cole slaw
  • 1 head of red cabbage shredded
  • 1 head of napa cabbage shredded
  • 5 carrotts peeled and shredded
  • 2 cups of mayoaise
  • 1/2 cup of balsamic vinegar
  • 2 tbsp of honey
  • 1 tbsp of kosher salt
  • 1 tbsp of white pepper
  • some fresh parsly chopped

Method

  • take the beef and trim off any excess fat.
  • take the next seven ingredients mix together and rub the beef with them and let rest in refridgerater for at least an hour overnight is best.
  • take beef out and let it cool down from fridge for about 20 minutes while you chop your veggies.
  • add the oil to a dutch oven or a pot large enough to fit beef in heat up on medium to high heat then add beef searing on all sides to lock in juices.
  • once seared take out and set to side on a plate.
  • add the onions and sautee untill translucent then add the garlic , celery and carrots sautee for about 3 minutes take the red wine and deglaze pot then add the tomato paste stir. add the beef stock return beef and juices that have collected on plate to pot .the liquid in the pot should cover the beef about half way..bring to a boil then cover the pot and place in oven for about 2-3 hours at about 275 degrees after 2 hours check beef and if it falls apart when you pick it up then it is done if not lefor a while longer
  • once done take out the beef and pull it apart this should happen easily.place beef on your favorite roll or sandwhich bread and top off with a cole slaw.
  • cole slaw:
  • take the cabbage and carrots and mix together
  • add the rest of ingredients in a seperate bowl and blend well toss everything together
  • and let sit for atleast an hour so it softens up a little
  • enjoy with a great beer
