Ingredients

  • 2 c. sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. butter or margarine
  • 1 1/2 to 2 c. pecan halves

Method

  • Combine sugar, baking soda, salt and buttermilk in Dutch oven. Cook over high heat to 210° on candy thermometer (about 5 minutes).
  • Stir frequently, scraping sides and bottom of pan.
  • Add butter and pecans.
  • Cook, stirring constantly to very soft ball sate (230° on candy thermometer).
  • Remove from heat; cool 2 minutes.
  • Beat until thickened and creamy.
  • Drop by tablespoons onto waxed paper.
  • Makes 15 pralines.
