Ingredients
- 1 c. raw rice
- 1 small onion, chopped
- 1/2 bell pepper, chopped
- salt and pepper to taste
- 1 (No. 2) can tomatoes
- 1/2 lb. smoked sausage, cut in slices
Method
- Saute rice, onion and bell pepper in skillet until golden brown.
- Put rice mixture in casserole.
- Cover with tomatoes and mix in sausage, salt and pepper.
- Cook, covered, at 350° for 1 hour.
