Ingredients

  • 2 c. buttermilk
  • 1 c. butter (not margarine)
  • 1/4 c. light corn syrup
  • 2 tsp. baking soda
  • 4 c. sugar
  • 2 c. chopped pecans
  • 2 Tbsp. vanilla

Method

  • Put buttermilk, butter, corn syrup, baking soda and sugar into a large 6 to 8-quart pot.
  • Place on low heat, stirring until sugar is melted.
  • Cook to 236° on candy thermometer or until soft ball forms when dropped into cold water.
  • Remove from heat.
  • Cool to lukewarm.
  • Add nuts and vanilla.
  • Beat until mixture becomes thick and loses it's gloss.
  • Pour into buttered 12 x 14-inch pan. Cool.
  • Cut into squares.
  • Makes about 3 pounds.
