Ingredients

  • 1 c. finely chopped onion
  • 1 c. chopped parsley
  • 2 Tbsp. olive oil or peanut oil
  • 1 Tbsp. finely chopped garlic
  • 4 c. fresh tomatoes, peeled and chopped
  • ground red pepper to taste
  • salt to taste
  • 2 c. Burgundy wine
  • 1 Tbsp. soy sauce
  • 1 large fish (red snapper)

Method

  • Place onions and parsley in olive oil and saute for a little while.
  • Add garlic and then the rest of the ingredients except fish.
  • Cook until the onions are nearly done.
  • Pour sauce over fish to be baked on the pit in a boat made from aluminum foil.
