Ingredients
- 1 c. finely chopped onion
- 1 c. chopped parsley
- 2 Tbsp. olive oil or peanut oil
- 1 Tbsp. finely chopped garlic
- 4 c. fresh tomatoes, peeled and chopped
- ground red pepper to taste
- salt to taste
- 2 c. Burgundy wine
- 1 Tbsp. soy sauce
- 1 large fish (red snapper)
Method
- Place onions and parsley in olive oil and saute for a little while.
- Add garlic and then the rest of the ingredients except fish.
- Cook until the onions are nearly done.
- Pour sauce over fish to be baked on the pit in a boat made from aluminum foil.
