Ingredients
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 c. finely grated carrots
- 2 c. sugar
- 1/4 tsp. salt
- 4 eggs
- 1 tsp. cinnamon
- 1 1/2 c. oil
Method
- Combine oil with sugar.
- Beat in eggs, one at a time.
- Add dry ingredients; mix well.
- Add carrots.
- Place in greased pans.
- Bake in a 350° oven for 25 minutes or more.
- I prefer to cook until just done enough to turn out of pan.
- Cool; ice with Nut Icing.
