- 3 eggs
- 2 c. firmly packed brown sugar
- 1 c. vegetable oil
- 2 c. grated zucchini
- 1 tsp. vanilla
- 3 c. flour
- 1 c. chopped walnuts
- 2 tsp. cinnamon
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. allspice
Method
- Beat eggs until thick and lemon colored.
- Gradually beat in sugar.
- Stir in oil, then zucchini and vanilla.
- Stir together flour, nuts, cinnamon, allspice, salt, baking soda and baking powder.
- Add to egg mixture, mixing only until all ingredients are moistened.
- Pour into two 9 x 5 x 3-inch baking pans or 1 Bundt loaf pan.
- Bake at 325° for 70 minutes or until knife inserted in center comes out clean.
- Cool 10 minutes, remove from pans.
- Cool completely on wire rack.
