Ingredients

  • 3 eggs
  • 2 c. firmly packed brown sugar
  • 1 c. vegetable oil
  • 2 c. grated zucchini
  • 1 tsp. vanilla
  • 3 c. flour
  • 1 c. chopped walnuts
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. allspice

Method

  • Beat eggs until thick and lemon colored.
  • Gradually beat in sugar.
  • Stir in oil, then zucchini and vanilla.
  • Stir together flour, nuts, cinnamon, allspice, salt, baking soda and baking powder.
  • Add to egg mixture, mixing only until all ingredients are moistened.
  • Pour into two 9 x 5 x 3-inch baking pans or 1 Bundt loaf pan.
  • Bake at 325° for 70 minutes or until knife inserted in center comes out clean.
  • Cool 10 minutes, remove from pans.
  • Cool completely on wire rack.
