Ingredients
- 6 to 7 lb. brisket
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 medium onions
- 4 carrots
- 4 potatoes
- 1 c. water
Method
- Preheat oven to 350°.
- Sprinkle beef with salt and pepper. Place in a large skillet.
- Brown meat on fat side over high heat. While meat is browning, pare carrots and potatoes. Cut in chunks. Slice onions.
- Remove meat and place in large roasting pan.
- Add onions to skillet.
- Saute until golden brown.
- Spoon onions over meat.
- Surround meat with vegetables.
- Add 1 cup water.
- Roast covered 2 1/2 to 3 hours or until meat is done.
