Ingredients

  • 6 to 7 lb. brisket
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 medium onions
  • 4 carrots
  • 4 potatoes
  • 1 c. water

Method

  • Preheat oven to 350°.
  • Sprinkle beef with salt and pepper. Place in a large skillet.
  • Brown meat on fat side over high heat. While meat is browning, pare carrots and potatoes. Cut in chunks. Slice onions.
  • Remove meat and place in large roasting pan.
  • Add onions to skillet.
  • Saute until golden brown.
  • Spoon onions over meat.
  • Surround meat with vegetables.
  • Add 1 cup water.
  • Roast covered 2 1/2 to 3 hours or until meat is done.
