Ingredients

  • 1/2 c. Sugar Twin
  • 4 eggs or egg substitute
  • 1/2 c. oil or unsweetened applesauce
  • 1 tsp. lite salt
  • 3/4 c. chopped pecans
  • 2 c. grated carrots
  • 1 (5 oz.) can crushed pineapple (unsweetened), undrained
  • 1 1/2 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 1/2 c. plain flour
  • 1 small box instant sugar-free vanilla pudding
  • 2 tsp. baking powder

Method

  • Preheat oven to 350°.
  • Spray and flour 9 x 13-inch pan.
  • Beat eggs; add Sugar Twin, water and oil.
  • Sift dry ingredients together and slowly add to egg mixture.
  • Add carrots, pecans and pineapple.
  • Spread in prepared pan and bake for 40 minutes.
  • Cool and frost.
