Ingredients
- 1 (2 1/2 lb.) broiler-fryer chicken
- 1 c. pancake mix
- 3/4 c. water
- cooking oil
Method
- In a covered saucepan, simmer chicken in salted water, enough water to cover for 20 minutes; drain.
- In a bowl, combine pancake mix and salt; stir in water.
- Beat for 2 minutes.
- Dip chicken in batter.
- Let excess batter drain off into bowl.
- In heavy skillet, deep fry a few pieces of chicken at a time until golden brown.
