Ingredients

  • 1 c. onions, cut
  • 1 c. pepper, cut
  • 1 c. mushrooms, cut in 1/2
  • 1 tsp. garlic
  • 1 c. broccoli
  • 2 lb. chicken breasts, cut up
  • bread crumbs
  • 2 eggs
  • 1/2 c. oil
  • 1 c. chopped tomato
  • 1 bag Cheddar cheese

Method

  • Dip chicken breast pieces into eggs, then bread crumbs.
  • Brown in frypan, put aside.
  • Then stir-fry vegetables in oil.
  • Place chicken in baking pan.
  • Put stir-fry vegetables on top of the chicken, then put Cheddar cheese on top, then add chopped tomatoes to top. Put in oven at 350° for 1/2 hour.
  • Serve with white rice.
