Ingredients

  • 3/4 lb. lean ground beef
  • 2 eggs
  • 1/2 c. grated Parmesan cheese
  • 1 c. (8 oz.) Ricotta or cottage cheese
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 (32 oz.) jar spaghetti sauce
  • 6 lasagna noodles
  • 8 oz. Mozzarella cheese slices (2 1/2 slices per layer)
  • 1/2 c. Parmesan cheese (sprinkle some on each layer)

Method

  • Crumble meat into strainer and put in container to catch grease.
  • Cover and microwave on High, 3 to 4 minutes.
  • In 1-quart bowl, slightly beat eggs.
  • Add 1/2 cup Parmesan cheese, Ricotta or cottage cheese, oregano, salt and pepper plus cooked meat; mix well.
