Ingredients

  • 2 lb. flounder or other fish fillets, skinned (fresh or frozen)
  • 6 slices cooked ham or turkey ham (6 oz.)
  • 6 slices Swiss cheese (6 oz.)
  • 1 tsp. grated orange rind
  • 1/4 tsp. white pepper
  • 1 egg, beaten
  • 1 c. bread crumbs
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. flour
  • 1 c. light cream or half and half
  • 1/4 c. Parmesan cheese

Method

  • Thaw fillets if frozen.
  • Place 1 slice each of ham and cheese in center of each fillet.
  • Cut to fit.
  • Sprinkle with grated orange rind and white pepper.
  • Roll into pinwheels and secure with toothpicks.
  • Gently dip roll in beaten egg; coat with bread crumbs.
  • Place in a greased 12 x 8 x 2-inch baking dish.
