- 2 lb. flounder or other fish fillets, skinned (fresh or frozen)
- 6 slices cooked ham or turkey ham (6 oz.)
- 6 slices Swiss cheese (6 oz.)
- 1 tsp. grated orange rind
- 1/4 tsp. white pepper
- 1 egg, beaten
- 1 c. bread crumbs
- 1 Tbsp. butter or margarine
- 1 Tbsp. flour
- 1 c. light cream or half and half
- 1/4 c. Parmesan cheese
Method
- Thaw fillets if frozen.
- Place 1 slice each of ham and cheese in center of each fillet.
- Cut to fit.
- Sprinkle with grated orange rind and white pepper.
- Roll into pinwheels and secure with toothpicks.
- Gently dip roll in beaten egg; coat with bread crumbs.
- Place in a greased 12 x 8 x 2-inch baking dish.
