Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup banana, mashed ripe (about 2 medium)
  • 1/4 cup milk
  • 1 tablespoon orange peel, grated
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup flaked coconut
  • 1/2 cup nuts, chopped
  • 1/2 cup crushed pineapple

Method

  • In a mixing bowl, cream butter and sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Beat in banana, milk, orange peel and extracts.
  • Combine flour, baking soda and salt; add to the creamed mixture just until moistened.
  • Fold in the coconut, nuts and pineapple.
  • Transfer to a greased 9x 5 x 3 inches loaf pan.
  • Bake at 350 for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pan to a wire rack.
  • Yield: 1 loaf.
