Ingredients

  • 3/4 c. mashed banana
  • 1/3 c. vegetable oil
  • 2 large eggs
  • 1/2 c. water
  • 2 c. flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 c. chopped nuts

Method

  • Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices.
  • Beat well. Stir in chopped walnuts.
  • Spoon batter into an oiled and floured 9 x 5-inch loaf pan.
  • Spread batter evenly in pan.
  • Bake at 325° for 45 minutes or until a knife comes out clean.
