Ingredients

  • 870 g jar pitted morello cherries
  • ½ cup (60 g) self-raising flour
  • 2 eggs
  • 1 cup (250 ml) skim milk
  • ½ cup (125 g) caster sugar
  • 2 teaspoons butter, melted
  • 2 teaspoons grated orange rind
  • icing sugar, to dust

Method

1. Preheat the oven to moderate 180°C (350°F/Gas 4). Drain the cherries very well and place on paper towels.

2. Sift the flour into a mixing bowl. Whisk the eggs, milk, sugar, butter and orange rind together in a separate bowl. Make a well in the centre of the flour and gradually add the milk mixture, stirring constantly until the batter is smooth. Do not overmix.

3. Arrange the cherries over the base of a 20 cm, 1 litre ovenproof dish. Pour in the batter and bake for 40 minutes, or until golden brown and firm. Dust with icing sugar and serve immediately. Delicious with low-fat ice cream.
