Ingredients

  • 3 c. all-purpose flour
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 eggs
  • 2 c. brown sugar, packed
  • 1 c. cooking oil
  • 1 tsp. vanilla
  • 2 c. grated, unpared zucchini squash
  • 1/2 c. chopped nuts
  • 1/2 c. chopped dates (optional)
  • 2 Tbsp. flour

Method

  • Mix together 3 cups flour, cinnamon, soda, baking powder and salt.
  • In mixer bowl, beat eggs well.
  • Gradually add sugar and oil; beat until well mixed.
  • Add vanilla and half the dry ingredients.
  • Add remaining dry ingredients and zucchini, mixing by hand.
