Ingredients

  • 4 Slices Bacon, Diced
  • 6 Or 7 Med. Zucchini
  • 1/2 Med Onion, Diced
  • 1/2 Cup Diced Celery
  • 1 Sm Can Mexi-corn
  • 1 - 6oz Can Tomato Sauce
  • 1 Clove Garlic Minced
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1 Cup Shredded Cheddar Cheese

Method

  • Cook diced bacon in large skillet until done.
  • Drain off excess fat.
  • Wash and cut zucchini in 1/4 inch slices.
  • Add to skillet along with onion, garlic, celery, corn, tomato sauce and salt and pepper.
  • Let simmer covered until squash is tender.
  • Sprinkle cheese over top and heat until cheese is melted.
