Ingredients
- 4 Slices Bacon, Diced
- 6 Or 7 Med. Zucchini
- 1/2 Med Onion, Diced
- 1/2 Cup Diced Celery
- 1 Sm Can Mexi-corn
- 1 - 6oz Can Tomato Sauce
- 1 Clove Garlic Minced
- 1/2 Tsp Salt
- 1/4 Tsp Pepper
- 1 Cup Shredded Cheddar Cheese
Method
- Cook diced bacon in large skillet until done.
- Drain off excess fat.
- Wash and cut zucchini in 1/4 inch slices.
- Add to skillet along with onion, garlic, celery, corn, tomato sauce and salt and pepper.
- Let simmer covered until squash is tender.
- Sprinkle cheese over top and heat until cheese is melted.
