Ingredients
- 2 to 3 fresh zucchini, sliced
- 2 ripe tomatoes, peeled and sliced
- 2 medium onions, thinly sliced
- 1/2 c. melted butter or oleo
- 1 (8 oz.) pkg. Mozzarella cheese, sliced or grated
- basil
- Parmesan cheese
Method
- Preheat oven to 450°.
- Layer zucchini, tomatoes and onion in a 2 to 3 quart Pyrex dish.
- Drizzle butter over top.
- Sprinkle with basil.
- Cook for 20 minutes.
- Remove and put Mozzarella on top; sprinkle with Parmesan cheese.
- Cook another 10 minutes, until the cheese is melted.
- Serves 6.
