Ingredients

  • 2 to 3 fresh zucchini, sliced
  • 2 ripe tomatoes, peeled and sliced
  • 2 medium onions, thinly sliced
  • 1/2 c. melted butter or oleo
  • 1 (8 oz.) pkg. Mozzarella cheese, sliced or grated
  • basil
  • Parmesan cheese

Method

  • Preheat oven to 450°.
  • Layer zucchini, tomatoes and onion in a 2 to 3 quart Pyrex dish.
  • Drizzle butter over top.
  • Sprinkle with basil.
  • Cook for 20 minutes.
  • Remove and put Mozzarella on top; sprinkle with Parmesan cheese.
  • Cook another 10 minutes, until the cheese is melted.
  • Serves 6.
