Ingredients

  • 4 1/2 lb. green mangoes, peeled and sliced
  • 2 large onions, chopped
  • 2 large green peppers, chopped
  • 2 garlic cloves, or 1/4 tsp. garlic powder
  • 1/2 c. raw ginger, grated, or 1 Tbsp. powdered ginger
  • 1 c. seedless raisins or local fruit
  • 4 c. white vinegar
  • 3 c. brown sugar
  • 1 Tbsp. cinnamon
  • 2 tsp. salt
  • 1 tsp. allspice
  • 1 tsp. ground cloves
  • 1/4 tsp. cayenne pepper

Method

  • Bring mixture to a boil.
  • Reduce heat and simmer until the fruit is tender.
  • Cook approximately 1 hour, stirring from time to time, to prevent fruit from burning.
