- 4 1/2 lb. green mangoes, peeled and sliced
- 2 large onions, chopped
- 2 large green peppers, chopped
- 2 garlic cloves, or 1/4 tsp. garlic powder
- 1/2 c. raw ginger, grated, or 1 Tbsp. powdered ginger
- 1 c. seedless raisins or local fruit
- 4 c. white vinegar
- 3 c. brown sugar
- 1 Tbsp. cinnamon
- 2 tsp. salt
- 1 tsp. allspice
- 1 tsp. ground cloves
- 1/4 tsp. cayenne pepper
Method
- Bring mixture to a boil.
- Reduce heat and simmer until the fruit is tender.
- Cook approximately 1 hour, stirring from time to time, to prevent fruit from burning.
