Ingredients

  • 1 eggplant
  • olive oil
  • salt
  • 1 1/2 c. chopped onion
  • 3 c. diced tomatoes
  • 1 lb. pork sausage
  • 1 1/2 c. bread crumbs
  • 1 tsp. paprika
  • 1/4 tsp. pepper
  • 1 tsp. nutmeg
  • 1 tsp. sweet basil
  • 1 tsp. Italian seasoning
  • 1 c. shredded cheese

Method

  • Cut eggplant into 1/2-inch slices. Sprinkle with salt. Saut onions, tomatoes, paprika, pepper and spices. Add meat; cook 5 minutes. Rinse eggplant. Place alternate layers of meat mixture and eggplant in casserole dish, beginning and ending with meat. Cover with foil and bake 40 minutes at 350°. Remove foil and sprinkle with bread crumbs and cheese. Bake 10 minutes more.
