Ingredients

  • 3 c. chopped, peeled zucchini
  • 3 eggs
  • 2 c. sugar
  • 1 c. Wesson oil
  • 3 c. flour (all-purpose)
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 c. white raisins
  • 1/2 c. chopped nuts

Method

  • Combine zucchini, eggs, sugar and Wesson oil.
  • Mix thoroughly; empty into a large bowl.
  • Sift flour, cinnamon, salt and baking soda together and add to wet ingredients.
  • Add raisins and chopped nuts.
  • Place evenly in 2 greased and floured loaf pans.
  • Bake at 325° for 1 hour.
