Ingredients
- 3 c. flour
- 1 1/2 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 2 c. shredded, unpeeled zucchini
- 3/4 c. chopped nuts
- 3/4 c. raisins
- 4 eggs
- 1 c. vegetable oil
Method
- In a large bowl mix all ingredients except eggs and oil.
- In another bowl, beat eggs and oil.
- Pour over flour mixture and stir until moistened.
- Turn into two greased 9 x 5 x 3-inch loaf pans or Bundt pan.
- Bake in a 350° oven for 1 hour and 15 minutes, until pick inserted in center comes out clean.
- Cool in pan 10 minutes, then invert on rack and cool completely.
- Sprinkle a little confectioners sugar on top.
