Ingredients

  • 3 c. flour
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 2 c. shredded, unpeeled zucchini
  • 3/4 c. chopped nuts
  • 3/4 c. raisins
  • 4 eggs
  • 1 c. vegetable oil

Method

  • In a large bowl mix all ingredients except eggs and oil.
  • In another bowl, beat eggs and oil.
  • Pour over flour mixture and stir until moistened.
  • Turn into two greased 9 x 5 x 3-inch loaf pans or Bundt pan.
  • Bake in a 350° oven for 1 hour and 15 minutes, until pick inserted in center comes out clean.
  • Cool in pan 10 minutes, then invert on rack and cool completely.
  • Sprinkle a little confectioners sugar on top.
