Ingredients
- 2 lb. potatoes
- 1 medium onion, chopped
- 1/4 c. butter
- 1 Tbsp. flour
- 1/4 tsp. pepper
- 1 tsp. salt
- 2 c. milk
- 12 oz. Cheddar cheese, shredded
- 1/4 c. bread crumbs
- paprika
Method
- Boil potatoes until tender (approximately 25 minutes).
- Cut potatoes into 1/8-inch slices.
- Cook onion and butter in 2-quart saucepan until onion is tender.
- Stir in flour, pepper and salt. Cook over low heat until bubbly.
- Add milk and 3/4 of the cheese. Heat to boiling.
- Boil and stir for 1 minute.
