Ingredients
- 2 firm zucchini
- 2 Tbsp. olive oil
- 1 clove garlic, minced
- 12 cherry tomatoes
- 1/2 tsp. dried thyme
- salt and pepper to taste
Method
- Peel and quarter lengthwise the zucchini; cut crosswise in 1/2-inch slices.
- In a large skillet, heat oil.
- Add zucchini and garlic until brown.
- Add tomatoes and thyme.
- Simmer until everything is warm.
- Season to taste.
