Ingredients

  • 7/8 c. flour
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 c. water
  • 1/2 c. milk
  • 4 oz. butter or meat drippings

Method

  • Place flour and salt in bowl and make a well in the center into which pour milk.
  • Beat until fluffy.
  • Beat eggs lightly.
  • Stir into batter.
  • Add water and continue beating until mixture light and fluffy.
  • Permit to stand for 1 hour (optional).
  • Beat it again. Have ready hot oven-proof dish (about 10 x 10-inch) containing about 1/4 inch melted butter or hot beef drippings.
  • Pour in batter.
  • It should be about 5/8 inch high. Bake the pudding in hot oven, 400°, for about 20 minutes.
  • Reduce heat to 350° and bake 10 - 15 minutes longer.
