Ingredients

  • 1/3 c. vegetable oil
  • 1 (8 oz.) carton plain low-fat yogurt
  • 1/2 c. sugar
  • 2 pkg. dry yeast
  • 1/2 c. warm water (105~ to 115~)
  • 2 Egg Beaters (egg substitute)
  • 4 c. all-purpose flour
  • 1 tsp. salt
  • butter flavored vegetable cooking spray

Method

  • Combine first 3 ingredients; set aside.
  • Dissolve yeast in warm water in large mixing bowl and let stand 5 minutes.
  • Stir in yogurt mixture and eggs.
  • Combine flour and salt.
  • Stir 2 cups flour mixture into yogurt mixture and beat at medium speed with electric mixer until smooth.
  • Gradually stir in remaining flour mixture, cover and put in a warm place, letting rise until doubled in bulk, approximately 1 hour and 15 minutes.
  • Punch dough down and shape as desired.
  • Place on baking sheets coated with cooking spray.
  • Cover, let rise until double in bulk.
  • Bake at 375° for 10 to 12 minutes.
  • Yield: 4 dozen (66 calories per roll).
