Ingredients
- 2 lb. smoked sausage
- 1 large can yams with pineapple
- 1/2 tsp. cinnamon
- 1/4 tsp. orange peel
- 1 to 3 c. light brown sugar
Method
- Cut sausage into 3-inch pieces.
- Cover with water and cook until tender; drain.
- Slice lengthwise to form a pocket.
- Arrange on cookie sheet, pocket side up.
- Drain yams and pineapple (reserve 3 tablespoons juice).
- Mash potatoes and pineapple.
- Add sugar, spices and juice; cream well.
- Spoon filling into sausage pockets. Dot with butter.
