Ingredients

  • 2 lb. smoked sausage
  • 1 large can yams with pineapple
  • 1/2 tsp. cinnamon
  • 1/4 tsp. orange peel
  • 1 to 3 c. light brown sugar

Method

  • Cut sausage into 3-inch pieces.
  • Cover with water and cook until tender; drain.
  • Slice lengthwise to form a pocket.
  • Arrange on cookie sheet, pocket side up.
  • Drain yams and pineapple (reserve 3 tablespoons juice).
  • Mash potatoes and pineapple.
  • Add sugar, spices and juice; cream well.
  • Spoon filling into sausage pockets. Dot with butter.
