Ingredients

  • 4 to 6 c. green leaf lettuce, freshly picked
  • 1 c. chopped young sweet green onions
  • 1/3 c. bacon grease or oil
  • 1/3 c. white vinegar
  • 1/3 c. water
  • 1/8 tsp. sugar
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • fried bacon, broken in pieces (optional)

Method

  • Wash lettuce and pat dry with paper towels.
  • Combine lettuce and onions in a large bowl.
  • Set aside.
  • In a saucepan over high heat, combine oil, vinegar, water and sugar.
  • Bring vinegar mixture to a boil (do not boil in microwave) and pour over the lettuce and onions, stirring and turning the lettuce so most of the lettuce comes in contact with the hot mixture.
  • Sprinkle with salt and pepper.
  • Add bacon, if desired.
